Makes 4 servings
1 pound mascarpone cream
5 egg yolks
5 egg whites
1 cup sugar
1 tablespoon vanilla extract
4 tablespoons bittersweet chocolate powder
30 dry Lady Fingers (dry packaged)
1 cup strong coffee
1 cup coffee liqueur
In a large bowl whip the egg yolks and vanilla with half the sugar until very creamy, add the mascarpone cream to the mixture until well blended.
Whip the egg whites until they become stiff. Add the rest of the sugar and whip until they become glossy, carefully fold the egg whites into the mascapone mixture.
Arrange half the Lady Fingers soaked in the coffee/coffee liqueur blend on the bottom of a 9”x 6”x 3” high serving dish. Spread evenly half the Tiramisu cream over the soaked Lady Fingers and repeat the step to form two layers with rest of the ingredients.
Sprinkle the chocolate powder over the top of the finished Tiramisu and chill for 2 hours; overnight is even better to develop all the flavors.
Wine suggestion: A sweet and aromatic Muscat.
