French Radishes Sandwich
Makes 4 servings
1 whole French baguette
½ cup butter, salted
2 bunches French radishes
1 tablespoon Fleur de Sel
Split the baguette into 4 equal pieces and then in half lengthwise. Have the butter at room temperature (to make it easier to spread).
Wash and cut off the green tops from all the radishes and split them in half lengthwise with a paring knife.
Spread the butter on the cut side of each piece of bread and arrange the sliced radishes (cut side on the butter) to cover the baguette pieces. Liberally sprinkle the Fleur de Sel over the radishes. Enjoy at once.
Note: This sandwich was a treat when I was a school boy and is still very popular to this day all over France. When radishes were out of season, shaved chocolate was substituted (minus the salt) for an even greater treat.
