Makes 2 cups
2-15 ounce cans garbanzo beans, drained and rinsed
¼ cup tahini, (sesame paste)
2 teaspoon garlic, chopped
¼ cup fresh lemon juice
¼ cup olive oil
Salt and cayenne pepper to taste
Place all the ingredients in a food processor and purée until very smooth, scraping down the side of the bowl from time to time. Season with salt and cayenne pepper to taste. Chill for an hour or overnight.
When ready to serve, drizzle 3 tablespoons of fresh lemon juice and olive oil on top. Garnish with toasted pita wedges around the serving bowl for easy dipping.
Note: The amount of lemon juice and cayenne pepper can be increased depending on your personal taste.
