Makes 1 loaf, 6 servings
4 ripe bananas, mashed
2/3 cup sugar
2 whole eggs
1/3 cup butter, melted
2 teaspoons baking powder
1 teaspoon baking soda
½ cup walnuts, shelled
½ cup dry cranberries
Preheat oven to 350°. Grease a 9”x 5”x 3” loaf pan with one tablespoon of melted butter. With a fork, mix the eggs with the melted butter.
In a large mixing bowl whisk together the flour, sugar, baking powder and baking soda. Stir in the butter mixture, bananas, walnuts and cranberries. Combine until well blended.
Pour the mixture into the greased loaf pan, and bake in oven for 45 minutes until a toothpick inserted in the center comes out clean.
Note: You can substitute other dry fruits, such as cherries, prunes, apricots or favorites.
